Navratri Apple Kheer with Almond Milk (Rice-Free, Date-Sweetened)

Kheer is the dessert everyone misses during a fast, because it usually leans on rice. This version uses grated apple instead, cooked slowly in almond milk with crushed makhana for body. Dates sweeten it, and saffron and cardamom give it the flavor you expect from a festival kheer. It’s ready in about 25 minutes.

Ingredients and Method: as listed above. Use ๐Ÿ–ผ apple-kheer-2-ingredients beside the ingredient list and ๐Ÿ–ผ apple-kheer-3-method beside the steps.

Tips:

  • Taste before serving. If you want it sweeter, mash in one more date.
  • If the almond milk looks like it’s separating, lower the heat and stir continuously.
  • It thickens as it cools. Loosen it with a splash of almond milk if you serve it chilled.
  • Ingredients allowed during Navratri vary by family and region, so swap anything your household doesn’t use.

Recipe used

  • 2 medium apples, grated
  • 2 cups unsweetened almond milk
  • 1 tbsp ghee
  • 1/4 cup makhana, crushed (thickens the kheer)
  • 2 dates, deseeded and chopped
  • 1/4 tsp cardamom powder
  • 5-6 saffron strands
  • 4 almonds and 4 pistachios, sliced, for topping

Method:

  1. Warm the ghee and cook the grated apple for 3 to 4 minutes until soft.
  2. Add the almond milk and makhana. Simmer on low for 10 to 12 minutes, stirring often, until creamy.
  3. Stir in the dates, cardamom and saffron. Cook 3 more minutes, mashing the dates in.
  4. Serve warm or chilled, topped with nuts and apple cubes.
