This version has cumin, green chilli and ginger for flavor, potato and peanuts for body, and lemon to finish. After a short soak, it’s ready in about 20 minutes. Recipe used 1 cup samak rice (barnyard millet) 2 cups water 1 tbsp ghee 1 medium potato, in small cubes 2 tbsp roasted peanuts 1 tsp cumin seeds 2 green chillies, slit 1 tsp grated ginger Rock salt (sendha namak) to taste 1 tsp lemon juice and 2 tbsp chopped coriander to finish Method: Rinse the samak rice well and soak for 15 minutes.
